Vinification:
Grapes are pre-fermented and cryo-extracted for 3 days at 100 C and then vinified with an extraction of 15-25 days. For Syrah & Cabernet Sauvignon standard red vinification in piston vinificators. For Xinomavro in "Model-Ganimede" vinificators. Malolactic fermentation inside the barrel. The blend is allowed to age in French and American (10%) 225 lit oak barrels for 10 months.

Tasting comments:
Strong red colour with purple and red brick tints. Red fruit, caramel and cedar aromas. Soft mouth-feel with balance at the tennis and acidity. With medium density but with aromatic aftertaste on a background of tobacco, vanilla and spices.
Storage suggestions:
Store in dark, clear and cool place.
